In this edition of How We Roll, Jennifer and I answer a reader questions about preparing healthy meals while we're out in the wilderness somewhere boondocking.

mikjenOur Roadtrek eTrek has solar power, lots of batteries and is meant – with its massive 6,000 watt inverter – to allow us to be off the commercial grid for days on end. So we plug in a special little grill meant for cooking lean meat. We like it so much we have left our old propane grill at home.

If anyone knows of. a rental business near Niagara Falls. Either side of the border. Looking forward to hearing from you. Trish

    Having sold everything I owned, I’ve lived in my Roadtrek for five years, traveling the country, caring for elders and Hospice patients. If someone had told me I’d be doing this years ago, I would have thought them crazy, but the fact is I absolutely love my life. Being a nomad and doing what I do is the best. Am in Tucson, AZ for the winter. Will leave the end of April to make my way to Florida visiting family and friends, then north to Boston, my home town. Will probably spend the summer on Cape Cod before leaving for the long trip across country to Portland, OR, my adopted residence.

      Am definitely a moving target, but certainly believe in possibility. Love having this forum to link up with other “Roadtrekkers” who understand that less is more.

  3. Let’s the good time roll…. ! This is what i think when i see the nice vans! Us, we do camping in a tent since 16 years, but we are looking more and more seriously these kind of machines…. Just hope finding the BEST deal for us !!! Good road !!

  6. Hi you 2,,I have been following you for awhile & over the weekend we went to an RV & Camping show in Wausau, Wisconsin, which we are 20 minutes West of!! While there, happily, there was a Dealer of RoadTrek RVs from Tomahawk which is an hour North of Wausau, & I got to finally see 3 different models!! We really cannot afford one right now, but we are running up there tomorrow to see what all is on the lot & get on a list, if they have one,,of people interested in Used models that still have lotsa life left in them!! These littler ones are just perfect for ME to handle,, my hubby drives Semi so he can drive most anything, hehehe!! Lovin’ having found Your Page & exploring further because of it… Have fun RoadTrekking….

  7. I have been a member here for about a year and it is one of my favorite places to view every morning…makes me feel as if I am there enjoying your adventures with you. Now you have convinced me I need to buy a George Foreman grill in anticipation of a purchase of a Roadtrek but, of course, good for home too. I am curious about the solar power. Can you explain your method of maintaining the solar power and what is recommended for cleaning, things to avoid, etc. Thanks again Mike & Meryl…..just love to hear about your travels. Maureen (my Roadtrek will be called “Lulu” because I live on Lulu Island, Richmond, B.C.)

    Oh, I forgot to add, the George Foreman grill does veggies great, too. I especially like grilled zucchini squash. Lightly spray the pieces with Pam or butter spray and sprinkle garlic salt and pepper to taste.

    In a pinch, the George Foreman Grill can sub for a toaster. I’ve done it and it works great. With a little extra watching, I’ve even made French toast.

  11. We fulltimed for almost a year – and would love to get another Roadtrek and do it again. I don’t think we can afford an eTrek, but sure wish we could!

    One delight while Roadtreking was to pitch up in a small town on a weekend morning and go look for a Farmers Market – great food and great conversations! Also watch for ‘farm-gate’ operations – really taste the local flavour. Some memorable stops: Fresh veggies in September about 20 km outside Dawson City, Yukon! It really happened! Chicken straight from the farm at a Hutterite Colony in Alberta. Taber Corn in Alberta. Great roadside fruit and veggie stands in Mexico, too.

    When we are boon docking we cook our protein (fish, chicken, etc) on our propane grill. We do use a George Foreman grill too. Love to make panini sandwiches with it. When your sandwich bread gets a bit dry I just make panini ‘s using the GF grill. Only have to put the generator on for about five minutes. Don’t have an etrek yet!

    since we started fulltiming, we’ve pretty much eaten the same as we did at home before we left, with fewer baked goods (which is probably healthier). lots of salads and steamed vegetables, lean beef, pork, and chicken, and fish when we’re near the coast. our starches are bread, rice and potatoes it’s probably a good thing to be far from the doughnut shop for a week at a time 😉

  14. We have been cooking with our George Foreman Grill for years and love it too. Try chicken marinaded in Dales sauce , wonderful.
