A Crock-Pot cooker for our RV: Recipes wanted!

It's hard to believe how much a $15 purchase from Amazon can brighten your day. But such it was for us when we found the perfect-sized crockpot for our RV.
It was exactly what we needed. Small, round and just the right size to fit in the sink of our Roadtrek eTrek RV.
The sink? Exactly. That way, as we travel across the country during the day, the slow cooking crock pot can prepare our evening meals. By the time we reach our destination, a hot, sumptuous dinner is ready. Let's face it, one of the bothers of traveling in an RV can be meal preparation. After a long day on the road, it's just too easy to stop for fast food or hit a restaurant.  With our new Crock-Pot, we can have a nutritious, home-cooked meal without the hassle.

We've searched far and wide for the round four-quart sized model for months. We even brought home a bunch of other models that we found. None fit that sink.
We had all but given up the hunt until, browsing around the Amazon shopping site, there it was. Exactly what we were looking for. Exactly what we had given up finding. The four quart size is perfect for two people. We can easily get two meals out of each dinner. One to eat that night, one for the refrigerator or freezer.
The model we have – for those of you who want one – is officially known as the Rival Crock-Pot SCR4oo-B 4 Quart manual slow cooker. It has a removable stoneware insert for cooking and it also doubles as a serving dish.
Ah… but what do we eat, other than beef stew?
That's the reason for this post… we want your recipes.
Many of you have been using Crock-Pots for years as you've traveled. We've read your posts here and on our Facebook Group. So, using comments below, please tell us what you cook in your Crock-Pots and share the recipe.

Besides Amazon, the crock pot is also sometimes available in Walmart stores.
I’m interested in the 4 qt crockpot used in the blog. We have one, but it won’t fit in our 07 210P sink. A 2 qt fits easily and will prepare plenty for two.
The following is a GREAT ‘freezer meal’. I make several of these, in advance, defrost in the fridge for at least 24 hours, then toss in the slow cooker.
Lime Chicken Fajita’s
1lb BLSL chicken breast or thighs, cut in strips
2 T. of fajita seasoning or taco seasoning
1 T. lime juice
1 green pepper, sliced
1 red (or other color pepper) sliced
1 white onion, sliced
Put all ingredients in slow cooker, cook on low 4-6 hours. Serve with fajita fixin’s.
French Dip
4lb. beef roast
1 can beer
1 small can beef broth
1 can Campbell’s French onion soup
1 sliced onion
French bread
cheese, if you wish.
Add all ingredients into slow cooker, except bread and cheese. Cook on low for 8 hours. You can cook this on high for a shorter period of time, but I have found that the beef is too tough.
Best Beef Stew for any method of cooking. Cranberry Beef Stew Crock pot *low 6 hours, Top of stove – 2 hours
1 pound beef cubes ,1 pack frozen vegetables for stew,1 small can of jellied cranberry sauce,
1 cup of beef broth ( can use beef bouillon cube and 1 cup water) ,1 medium potato (peeled& cubed, Handful of baby carrots or similar pieces of carrots ( We like lots of veggies ),Salt and Pepper to taste, Combine in crock pot and cook low about 6 hours ( high 3 to 4 hours ) or one top of stove – simmer, stirring occasionally. Enjoy – ** You can thicken the broth – Return crock pot to high for
10 min, stir 2 tbsp of flour into ½ cup cool water until smooth – add to crock
pot while stirring and cook 20 minutes.
Never thought of crockpot cooking while driving. Can’t wait to start Roadtrekin’!
By the way… when we drive we use the sink to hold our coffee maker. Never thought about using it to hold a cooking crock pot.
We’re going to have to find more quick easy meals for camping.
I call this Swiss Steak. I throw several steaks in the crock pot (I like to brown them with peppers and onions first, Worcester sauce, salt and pepper to taste) then cover them with can of stewed tomatoes and cook until tender. 3 to 4 hours. Serve over boil in bag rice. Tastes wonderful.

I use a thermal cooker – doesn’t need electricity. It makes awesome soup and stew.
Easy Beef Stroganoff. Beef, french onion soup, sour cream. Brown beef in frying pan and add to crockpot with soup. Cook until done. Add sour cream. I like the thin sauce but my kids always made me thicken it.
Spanish chicken. Chicken, small can tomato paste, small jar green olives, small can of beer, paprika and garlic to taste. Cook on high for 4 hours (or low for 8 hours) until chicken is done and serve over rice.
You don’t need to run the generator. Buy the smallest size round crock pot, put it in the sink, and plug it in to an inverter. You may need an extension cord.
In the morning before hitting the road, add:
Stew meat (seasoned), onions, garlic, potatoes, carrots, Lipton onion soup mixed with 2 cups of water, pepper, a splash of wine or sherry……
The hard part is smelling it cook all day!
Crockpot Lasagna
Ingredients:
1 pound Ground Beef
Lasagna noodles
1 jar spaghetti sauce
1 1/2 cups cottage cheese
1 1/2 cups shredded Mozzarella cheese
2 tablespoons grated Parmesan cheese
Directions
Brown ground beef and drain.
Spoon 1 Cup spaghetti sauce in bottom of 4 quart crock pot.
Mix remaining sauce with beef.
Place 2 uncooked lasagna noodles on sauce in crock pot.
Spread 1/3 meat mixture on top of noodles.
Spread 3/4 Cup cottage cheese over meat.
Sprinkle 1/2 Cup mozzarella cheese over cottage cheese.
Add another layer of uncooked noodles, 1/3 meat mixture, the remaining cottage cheese and 1/2 Cup mozzarella cheese.
Place another layer of uncooked noodles, meat mixture, and mozzarella cheese.
Sprinkle Parmesan cheese over top.
Cook on low for 4 hours.
If cooked much longer, it gets a bit well done.

I used my crock a lot – sat it outside under awning and simmered sauce or baked beans all day. Yummy!
Chicken Tortilla Soup
2 boneless/skinless chicken breasts
1 tbs olive oil
1 tsp cumin
1 tsp chili powder
1 tsp garlic powder
1/2 tsp sea salt
combine the dry ingredients in a bowl, coat the chicken with the olive oil then coat with the dry ingredients. in a skillet sear the chicken on both sides, cook till partially done or bake in a 350 degree oven till partially done. with a fork shred the chicken
for the slow cooker
1 tbs olive oil
1 cup diced onion
1 cup diced green bell pepper
3 cloves garlic minced
1 can fire roasted tomatoes
1 cup roasted hatch chilies shredded
32 oz-64 oz low sodium chicken stock
3 tbs tomato paste
4 cups hot water
1 can drained black beans
combine the above ingredients in the slow cooker. we usually cook about 4 hours on medium
before serving add some fresh chopped cilantro and serve with warmed corn tortillas
I’m not sure about a round crock pot – but in an oval one where they say to put the meat on top this works real good:
Bag of tiny carrots
A couple or more of vaidlia onions
Pkt of raw mushrooms washed
Put roast on top – then the juice flows down through the onions, mushrooms and carrots.
As much garlic, pepper & salt and as you like.
Turn on crock pot.
Yummy
Then after you’re through eating it the broth makes great French Onion soup.
DO NOT ADD POTATOES OR TOMATOES.
I only have an oval crock pot and it said to put the meat on top so I do

Me, myself couldn’t handle smelling the food cooking all day. We cook all kinds of meals in our 6 qt Dutch Oven inside a Galvanized Bucket….usually start to finish in 45 minutes. We’ve done it so much, it’s really easy and quick

Run your generator and put your pot in the sink. We used to make coffee in a drop maker running own the road. I used the air conditioners all the time driving and if you run the generator for that you might as well have coffee.

Always have one for camping. Even made an entire Thanksgiving meal in a crock pot, toaster oven and microwave. My girls favorite camping trip. When everyone was going out to eat…we were making precious memories.

TV’s have electricity when traveling with battery. We just camped this weekend.I cooked country style ribs for 4 hrs.Then hubby put them on the girll and they would melt in your mouth.The next day I cooked beans.They are good to cook chilies.soups etc.While you are hiking are just enjoying being outside.The crockpot is busy cooking.

Wow. Looks like you could put together a crock pot cook book, now. My recipe from our full timing years works well with skinless chicken pieces, boneless pork chops, or a small roast of almost any kind. Experiment freely.
Lightly season the meat you desire with salt and pepper to taste and layer it in the bottom of the pot.
Mix together some shredded parm with a couple of bags (minus the bags) of success rice or cooked white or brown rice. (I think an instant rice would work great as well). Long cooking rice requires to use too much of the juice of the tomatoes.
A couple of the large cans of Italian seasoned (onion, basil and oregano) diced tomatoes tossed in to the pot. Maybe some nice sweet onions, my hubby loves Vidiala onions.
Turn it on and enjoy a nice drive. I do check to make sure it never goes to dry. You can add stock, tomatoes juice or even some water without losing out on flavor.
About an hour from your serving time you can throw in some sliced zucchini, or mushrooms, or both! Sometimes I melt mozzarella cheese on top.
This is not a dish that requires exact measurements. Just keep an eye on the liquid the first couple of times you
make it.
We always make enough to enjoy at least 2 meals and it freezes great.

French Dip – beef roast, can of French onion soup, can of beer. Let cook all day on low, slice beef , put on rolls and dip in juice. Delicious. Really better the second day.
Just made cabbage rolls yesterday for the first time in a crock pot , the best I ever had very moist. Make them as you would for the oven and just put on low for 8 hours in the crock pot instead, Delicious!
Get some Pappy’s seasoning for pork, chicken, or steak. Really makes it good!

sorry Pork Dinner: 1-2 pounds pork cut in strips, 1 lg onion, 1 sm pepper sliced, 1 4 oz can mushrooms drained, 1 15 oz can tomato sauce, 3T brown sugar 1, 1 1/2 vinegar, 2 T worcestershire sauce. Place pork in crock pot mix other ingredients and pour on pork cook 6-8 hours serve over rice

Large wedges of cabbage, small can sauerkraut, cut up Granny Smith apple and kielbasa choice. The cabbage and apple help cut salty kraut. Sometimes I put some carrots in as well. Yummy!
Still don’t see where you have responded to how it works while you are driving. What do you use for electricity???
2 cans Great Northern Beans, 1lb cubed/cut up chicken, 1 jar of salsa. Throw in crockpot and cook for a few hours. Easiest recipe I’ve ever run across, and delicious!

this is a great idea, while not an RV’r yet, I’ve often wondered about meal preparation. this is going on my list of stuff to get when I get my E-trek. Santa promised!! and absolutely, chicken and dumplings. can also slow cook venison or similar wild game.

Don’t forget to look for the insert bags for the crockpot! They make clean up so easy. Used to get them at WalMart or HEB in TX but here in our home town in Ontario Canada have found them in Dollarama! I have been stocking up on them.
I don’t see a plug and how is it plugged in while driving…a generator?
Grill some hamburgers almost done then put in crock pot covered with salsa and let simmer for several hrs. Or take a pork tenderloin and have cut into to steaks. Grill then put on crock pot with salsa. Delicious!

I have an RV with a small oven and still bake cakes, cookies, and pies. Have a cast iron kettle I use to roast on top of the stove. Yes, we take a grill with us. Couldn’t get along without it.

Chicken pieces with salsa mixed with some taco seasoning mix. Put it on low before a long hike and come back and make rice.
I like to buy a couple cans of Veg-all Homestyle veggies (the big cans). I drain them and dump them in the bottoms. Then season a chuck roast to go on top. Pour a package of onion soup mix on top then about 1/2 to 3/4 cup water over that. Cover and cook until the meat is tender.

I made a new one tonight that was delicious. 4 pork chops….browned in butter and placed in crock. 1 can cream of chicken, I pkg ranch dressing mix…… Add both and heat in pan you browned pork chops in and add 2 T butter..Add to crockpot. Serve over rice…..ENJOY. It is delicious!

I’m 62 years old and just now learning how to cook, the other day I had to buy some Reynolds wrap low behold up on the top shelf I found a box of Reynolds Slow Cooker Liners. Salsa Chicken
2-4 boneless chicken breast
1 jar salsa (we use Walmart’s Great Value Garlic and Lime
When stopped shred chicken with 2 forks. Stir to fully coat chicken. Add to tortilla wraps with shredded cheese and sour cream if desired. We also have Spanish Rice and black beans for Mexican theme night.
Walmart carries a pork roast dinner that has everything included. In MA n NH it runs about 15.00. Feeds my husband n me. I also make lasagna, beef stroganoff. Lots of things can be cooked in a crock pot.
Easy chicken & dumplings
2-3 chicken breasts (boneless, skinless )
2-3 cans cream of chicken soup (with equal water)
1 onion, diced
1-2 cans of Biscuits (cheap 8 count pkg)
Put chicken, soup & water in crick pot. Cook on low for 6 hours
Remove chicken and Shred, return to the pot
Cut or tear biscuits into quarters and drop into soup. Cook additional 20-25 minutes. Stirring as needed, pushing dumplings below surface of soup

For keeping the lid secure try a large rubberband. Hook it over the handle twist place over the lid and hook over the other handle.

Garlic Chicken
4-6 chicken breasts
1 cup packed brown sugar
2/3 cup vinegar (I used apple cider vinegar)
1/4 cup lemon-lime soda (diet or regular)
2-3 Tablespoons minced garlic
2 Tablespoons soy sauce
1 teaspoon fresh ground pepper
2 Tablespoons corn starch
2 Tablespoons water
Red pepper flakes (optional)
Directions
Spray slow cooker with non-stick cooking spray. Place chicken (frozen, thawed or fresh) inside slow cooker. Mix together brown sugar, vinegar, soda, garlic, soy sauce, and pepper together. Pour over chicken. Cook on low for 6-8 hours or high for 4 hours.
Take chicken pieces out of slow cooker (mine basically fell apart) and pour remaining sauce into saucepan. Place saucepan over high heat. Mix together corn starch and water, pour into saucepan, and mix well. Let sauce come to a boil and boil for 2-3 minutes, or until it starts to thicken and turns into a glaze. Remove from heat and let sit for a minute or two (it will continue to thicken as it cools down).

( Carne Asada) added a can of stewed tomatoes, a pkg of Taco seasoning, diced up a white onion diced up a red bell pepper chopped cilantro and 1 tbls brown sugar 1 tbls granulated garlic.If you like it spicy toss in a whole jalapeño pepper.puy the lid on it and let it cook all day until it fall’s apart . I use my crock pot in the RV, since the flood we are living in it. You can put anything in there, & dinner is ready when you get home.
I used to do that in our Roadtrek too! Loved pulling in, setting up and sitting down to a nice home cooked hot meal! I used the crockpot cooking bags for less cleanup, hence, using less water!!

2 lbs of ground beef browned 1/2 box of beef broth 1/2 box of chicken broth 1/2 cop of ur favorite pasta sause salt n pepper mix together put on low stir in broken noodles or small bow ties cook until slightly soften add 1/2 cup of frozen mixed veggies if it seems alittle dry ad more beef broth and stir and cook until veggies and noodles are cooked
Get a pork roast add a jar of pepperoncinies pour over roast cook on hi for 6 hrs. The best pulled pork roast ever! Let me know how it comes out!

Alligator Stew
Ingredients:
4 cups alligator meat, cut into small bite-size pieces
1/2 cup oil
1 large onion, chopped
1/2 cup green onions, chopped
1 large bell pepper, chopped
2 Tbs. parsley
1 cup water
1- 10 oz. can Rotel tomatoes
Salt and pepper to taste
Instructions
In a cooking pot add oil and lightly brown the alligator meat. Add chopped vegetables, Rotel tomatoes, salt and pepper. Cook until vegetables are wilted. Add water, cover pot and cook over medium heat for 30 to 40 minutes or until meat is tender. Serve over rice.
Pot Roast
Ingredients:
• 5 lbs boneless chuck roast (cut in 2 pieces)
• 1 ranch salad dressing mix (envelope)
• 1 italian salad dressing mix (envelope)
• 1 gravy mix (envelope s brown)
• 1 bay leaf
• 1/2 cup water
• 2 large onions
Directions
Place the chuck roasts in a 5-qt. slow cooker along with bay leaf. In a small bowl, combine the salad dressing and gravy mixes, stir in water. Pour over meat. Quarter onions break apart and put over top of meat. Cover and cook on low for 8 hours or until tender. If desired, thicken cooking juices for gravy.
To make you meal easier, buy some mash potatoes from the refrigerator section of your local grocery store. The trick behind this lovely potatoes is heat them than add to a bowl and add a little butter and a bit of milk and mix to make cream and smooth; or you can microwave potatoes (wash them poke a few holes in them and then wrap them up in a wet paper towel – if you microwave does not have a potato setting nuke 10 min and 5 min after each time you check them. I also recommend the buttered frozen carrots in your freezer section of your grocery store. Yes make your microwave you friend and whip up some amazing dinners that will stun the most picky of eaters.
This is a jewel of a recipe. You don’t need anything in a cabinet to do this; ya buy it, ya use it, it’s over. I use an extra cup of water, then reserve and freeze the sauce. Just pressure cooked a whole chicken, dumping one of my little containers of sauce in…excellent all over again.
CROCKPOT BEEF AND BROCCOLI
4 Ingredients
1 pound boneless beef chuck roast, sliced into thin strips
1 cup beef consumme
½ cup soy sauce
â…“ cup brown sugar or honey
1 tablespoon sesame oil
3 garlic cloves, minced
2 tablespoons cornstarch
2 tablespoons cooled sauce from the crock pot after being cooked
Fresh broccoli florets (as many as desired)
Hot cooked rice (brown rice, or riced cauliflower)
Directions
1. Place beef in a crock pot.
2. In a small bowl, combine consomme, soy sauce, brown sugar/honey, oil, and garlic. Pour over beef. Cook on low for 6-8 hours.
3. In a cup, stir cornstarch and sauce form the crock pot until smooth. Add to crock pot. Stir well to combine. (If your sauce is not thickening, try bringing your sauce to a boil on the stovetop with the corn starch mixture. Boil until your desired consistency is reached).
4. Add broccoli to the crock pot. Stir to combine.
5. Cover and cook an additional 30 minutes on high (the sauce has to boil for it to thicken).
6. Serve over hot cooked rice.
Slow Cooker Sauerkraut Pork Loin
INGREDIENTS:
2 tablespoons spicy horseradish mustard
1 (4 pound) boneless pork loin roast
1 onion, chopped
1 Granny Smith apple, chopped
1 (16 ounce) can sauerkraut with juice
salt and pepper to taste
1 1/2 cups chicken broth
DIRECTIONS:
1. Rub the horseradish mustard all over the pork loin. Layer the onion and apple in the slow cooker, and set the pork loin on top. Pour in the sauerkraut, including the juice. Season with salt and black pepper, then add the chicken broth. Cover and cook on Low until very tender, 6 to 8 hours.

I put a roast (small one), veggies, Lipton onion soup mix and a jar of gravy mix with a small cup of water…enough to cover the veggies….none left ever
Cut up a pound of chicken breast meat in bite size pieces and toss them in bite the crock pot get chicken wing sauce I use mild shake a good amount into the pot add Chicken stock a couple cups . chop up three stalks celery ,three carrots and one onion . add to this one can mixed veggies one can of sliced potatoes I can of mushroom soup let this all simmer stir occasionally .add garlic powder and adobo seasoning and a little seasonally and pepper . if you like you could add a cup of baby pasta small pasta to this and cook till the pasta is done and serve its delicious

We have recipes for a good sized family. We cook almost exclusively in our Crockpot for dinners. One quick tip: use Reynolds oven bags to cook in. They make cleanup of even the most messy foods a snap, and are a darn site cheaper than “crockpot liners”.

The best kept secret is that you can bake in them–similar heat to a solar oven. We frequently make bread or cakes while traveling.
For an easy mini-cake (for one or two) use 1/2 box of the Jiffy Yellow Cake Mix. In place of the egg we use a tablespoon of psyllium husk powder–works as an egg replacement and adds about 7 grams of fiber. Bake in crock pot in a separate small round pan or bowl (placed inside the pot)–about 1 hour. Also put a towel over the top of crock pot–adds insulation and increases top temperature.

I take a roast and put on bottom with water garlic,onions,spices or what you like.Then i take potatoes and peel or not peeled cut up and put in tinfoil and place on top of roast then take vegetables that you like and put in tinfoil and place on potatoes.Always put the food that takes the longest on bottom ,if i want turnip i would put that before the potatoes because it takes longer to cook

We have been using the book “Not Your Mother’s Slow Cooker Recipes for Two,” by Beth Hensperger. We have done more than half the recipes, and have enjoyed them all. Well, except for the Mac’n’cheese … i think it is easier and faster to just do it on the stove top, and I really like the texture better! The recipes say 2 .. but if you are like us, you may get 2 dinners and 2 lunches — depending on how big a meal you eat!
Get a 12-volt crockpot or an inverter big enough to run your regular crockpot off the batteries while you are en route. The 12 volt ones run are small, 1.5 quart, but that is big enough for one or two people. Check Camping World or Amazon to see 12 volt crockpots (aka slow cookers).
All great recipes but I’m clearly missing something pretty basic. How do I power my crockpot? Do you leave the generator running while heading down the road?

I use my generator to keep my crock pot powered up while going down the road yes. I Do a lot of long distance driving to Dog shows in my RV and find prepping a meal in the crock pot before I pull out in the AM means a good hot dinner in the PM 🙂
Chicken Curry
10 Bone in Chicken thighs, skin removed
1 jar thick & chunky salsa
1 onion, chopped
2 tbsp curry powder
1/2 cup Cream cheese spread
Put everything (except the cream cheese) in the slow cooker, cover with the lid
Cook on LOW 8-10 hours (or on HIGH 5 hours.
Add cream cheese & whisk until cream cheese is melted & sauce well blended.
Serve over brown rice!
PS This Hearty Hamburger Soup also freezes well.
Here is one of my favourites.
HEARTY HAMBURGER SOUP
Serves 10 to 18 depending on size of soup bowl
1 1/2 lb ground beef (saute beef and drain for best results)
1 medium cooking onion (chopped fine)
1 28 oz can tomatoes
2 cups water
3 cans consomme
1 can tomato soup
4 carrots (chopped fine)
1 bay leaf
3 celery sticks (chopped fine)
parsley
1/2 tsp. thyme
pepper to taste
8 tbsps barley
Simmer covered on stove at least 2 hours or all day or in crock pot all day
Very yummy and filling…..especially served with a fresh crusty bread

I saute filet of sole all the time when I am home. But I only cook it on the road when I’m cooking outside. But now I know how to cook sole in my crock pot!
Filet of Sole with Pesto
-1 to 2 pounds of white fish. I used Sole.
–bottled pesto
–shredded Parmesan cheese
–foil
Spread out a layer of foil on the counter top. Put a piece of fish in it. Cover it with a spoonful of pesto. Sprinkle on some shredded parmesan cheese. Fold over the foil to create a little packet. Put the packets in the crock pot. Continue to layer in foil packets until you run out of fish or your pot is 2/3 rds full.
I tried this last night and it is very good! I think you could put some veggies in a packet and add that too!!

chicken tortilla soup
2 chicken breasts
1 can refried beans
1 large can ro-tel tomatoes
1 small can salsa 12 oz
1 small bag frozen corn, black beans,peppers
1 envelope taco seasoning
put all ingredients in crock pot and cook low 6-8 hours, break up chicken
and stir.
add tortilla chips into bowl and then fill with soup, top with sour cream, shredded cheddar cheese, olives and enjoy

Steak Diane Pot Roast
My slow cooker is 3/5 QT.
About 2 -3 lbs of small potatoes, carrots and shallots . . . cut to rough chop and season with salt and pepper. Add to cooker.
2 to 2.5 lbs bone-in beef chuck roast. Make slits all over the roast and insert about 5 sliced garlic cloves. Season with S&P and add to cooker.
Whisk together about 1 cup beef stock, 4TB cognac, 2 tsp Worcestershire sauce, 2 tsp Dijon mustard, and 1tsp lemon juice. Add to cooker.
Cook on high for about 7 hours.
I remove meat and veggies for a few minutes and thicken the juice in cooker with a mix of flour and butter . Finish sauce with chopped parsley. Slice the roast and return roast and veggies to slow cooker. Serve and enjoy.
I serve with crusty French bread if available.

How about a rump roast or similar cut, a can of beef consume’ or broth. then add a can of either french onion soup or cream of mushroom depending on wanting a clear broth or a creamy gravy. Cook on low all day. A little before serving we take the meat out a shread it and return it back to the pot. Then we either server it over baked potatoes, rice, rolls. We either have a salad or another green veggie, green beans. I am a applesause person and love to have that with this meal.

I have a 12 volt 1.5 quart (small) crockpot that will work off the batteries. While driving, there is no drain from it. My new Roadtrek has an inverter that will power a regular house crockpot off the batteries should I decide the house one works better. The house one is a 4 quart so definitely I can cook more food in the house one, but there are only two of us, so the smaller one should be fine and take up less space. They have the 12 volt crockpots on Amazon for $28.
I saw the 12 volt pots, and they plug into the lighter socket. Is that what you do? Or did you find one that is only 12 volt but plugs into the electric outlet and works off the batteries in the Roadtrek? Ours is a Popular 210 with two batteries. Thanks !!

EASY CROCKPOT POTATO SOUP RECIPE
Ingredients:
1 (30 oz.) bag frozen hash-brown potatoes
2 (14 oz.) cans chicken broth
1 (10.75 oz.) can cream of chicken soup
1/2c chopped onion
1/3 tsp. ground black pepper
1 (8oz) package cream cheese (softened)
Garnish: minced green onion
Directions:
1. In a slow cooker, combine potatoes, broth, soup, onion, and pepper.
2. Cover, and cook on low for 5 hours.
3. Stir in cream cheese (or I use lighter Neufchâtel) cook 30 minutes, stirring occasionally, until combined. If you prefer less chuck soup – before serving use a potato masher
4. Garnish with green onion.
I also add chopped cooked bacon. This soup was so creamy I think it is replacing my ole family recipe from my mom.
Crock Pot Lasagna
(very good)
1 pound Ground Beef
Lasagna noodles
1 jar spaghetti sauce- very large jar
1 1/2 cups cottage cheese
1 1/2 cups shredded Mozzarella cheese
2 tablespoons grated Parmesan cheese
Directions
Brown ground beef and drain. Spoon 1 C. spaghetti sauce in bottom of 4 quart crock pot. Mix remaining sauce with beef. Place 2 uncooked lasagna noodles on sauce in crock pot. Spread 1/3 meat mixture on top of noodles. Spread 3/4 C. cottage cheese over meat. Sprinkle 1/2 C. mozzarella cheese over cottage cheese. Add another layer of uncooked noodles, 1/3 meat mixture, the remaining cottage cheese and 1/2 C. mozzarella cheese. Place another layer of uncooked noodles, meat mixture, and mozzarella cheese. Sprinkle Parmesan cheese over top. Cook on low for 4 hours.
If cooked much longer, it gets a bit well done. I brown my meat in the microwave in the MicroHearth. In case you get tired of the savory stuff, and in case you happen by some lovely peaches or other fresh fruits and berries in your travels:
fruit cobbler –
take any and all fruits you like and place in crock pot, sprinkle with sweetener (sugar, honey, agave, whatever)
you can either mix up a quick crumble topping (butter, flour, oats and sugar), or a batch of bisquick drop biscuits, or tear up a can of biscuits into pieces and place them on top.
cover loosely with foil to allow steam out but keep heat in.
or, for cold winter nights
Rice Pudding
1/2 gal milk
1 cup rice
1 cup sugar
1/2 tsp salt
2 Tbsp. butter
cover loosely and cook till it coats a spoon and rice is tender – sprinkle with cinnamon and serve (we like it warm)…

EASY CROCK POT BEEF TIPS
2 pounds beef tips
1 can beef broth
1 can cream of celery soup
1 can cream of mushroom soup
1 soup can of water
Cook all day on low in crock pot. 30 minutes before serving, add 1 ½ cups of rice.
Chili is a good one – just use your regular recipe but be sure to brown the meat before putting in slow-cooker. I use ground turkey. Chili benefits from long slow cooking. Have all the usual toppings – cheese, cilantro, avocado, sour cream, tortilla chips.
if you do not want to brown the meat first, you can always knead in a bit of gravy browning. it darkens the meat and the sauce…
That would darken the meat but I like the caramelization you get when you brown the meat. Also, if you use a meat with more fat, like beef, browning lets you separate out the fat for a healthier meal.
Try cooking the ground meat by boiling. This will remove the fat and you can rinse it with hot water and no grease. I freeze portions in baggies then just toss in Crook Pot as needed.

I have made a lot in mine, a simple recipe is Chicken in Ceasar Dressing
2 chicken breasts
garlic chopped, onion chopped (however much you like)
Frozen or fresh, whole green beans
diced carrots
left over corn or about a handfull of frozen
green peppers, diced (opt.)
pour about a cup of lite, Creamy Ceasar Dressing on top
You can use italian if you like, the Ceasar was better I thought.
Add about 1/2 cup water
Crank up the crock pot if you are in a hurry or keep it on low for a while, either way is fine.
Stir it around once you get to check on it.
It is great with a side of Alfredo noodles, or just a great meal without! Next time I do it I am gonna add some new potatoes chopped into quarters for a diff change.
This made two meals for us and my husband is a big eater.

CROCKPOT ROUND STEAK & TOMATOES
3 slices eye of round steak w/onion slices between meat slices
(for camping that is all that fits our small crockpot)
1 can Green Beans
1 can Diced Tomatoes (or whole/peeled)
1 can Tomato soup covering all
Cover and cook ~ 8 hours
If room, can add potatoes…or just serve w/potatoes, rice, noodles, etc.
CROCKPOT STEAK OR MEATBALLS
Round Steak cut into serving size pieces or your meatballs.
1 Can Cream of Mushroom Soup
1 Can Water (+/- as fits crockpot)
2 HEAPING TBSP French Onion Chip dip
Put all into crock pot on high for 1 hour, then turn to low for 5-7 hours depending on tenderness desired.
Serve with potatoes or noodles, green beans, and applesauce.

I saw the ‘stew in the sink’ idea online a couple of years ago, and found a small crockpot with open handles so that I could hook a short bunge cord to one side handle, through the lid handle and to the other side to hold the lid secure when traveling. I would often fix something to cook while we were traveling to a campground. I usually started it at home. Then I found out that when we are on the road, the outlets in our travel trailer don’t work! It apparently stayed fairly warm on the road for a couple of hours and by the time we got somewhere, plugged in, and got set up, it was hot again. Duh. That said, our favorite is turkey thigh stew–I even included it in my book, “The Blue Coyote.
“Turkey-Thigh Meat Stew—One of our favorite camping meals, thanks to friend Linda. In a slow-cooker crock, whisk together 1 can of tomato soup, 1 cup of red wine or turkey broth, and 1/4 cup flour. Add 3 pounds cubed turkey thigh meat, 3 carrots, cut diagonally in 1-inch slices; 2 onions, quartered; 4 potatoes, coarsely chopped; ½ cup coarsely chopped celery; 8 whole mushrooms; 2 beef bouillon cubes; 1 tablespoon Italian seasoning; 1 bay leaf; and salt and black pepper to taste. Stir to combine. Cover and cook in slow cooker on low for 8-10 hours.
Ok I made this! Yum! I wasn’t on the road though so I made it on the stove with canned turkey “got to use up that survival food you know” and left out the flour till the end. delicious!

i make pulled pork all the time for us get a 2 or 3 pound center cut pork roast or pork shoulder roast most people use the pork shoulder more flavour put it in the crock pot with a cut up onion and let cook for 6 to 8 hrs, take out and pull apart put back in crock pot add 2 bottles of barq sauce or sometimes from the juices i make a pork gravy and put the pulled pork back into the gravy you can use buns or have with mushed potatoes and veggies i hope you understood what i was saying enjoy my husband loves this either way

Chicago Style Italian Beef Sandwiches
2 1/2 – 3 lb chuck roast
1 small jar pepperoncinis
1 envelope onion soup mix
1 envelope Italian dressing mix
garlic powder or fresh garlic to taste
1/2 cup water
Sandwich rolls
Place the first 6 ingredients into the crock pot. Cook for 6 – 8 hours on high – or until beef pulls apart with fork. Pull apart with fork to shred. Pull out any pepperoncinis stems. Serve on rolls.
I made this a couple of weeks ago, it was wonderful!
PS I used beer instead of water.

We found an Aroma brand rice cooker/food steamer/slow cooker that fits the sink in our 210P. Holds about 3 qts. Great for slow cooking just about anything, or steaming vegies, rice, etc.
Curry
Start with any meat…beef, pork, chicken
Add any sturdy veges…..garlic, ginger, onion, carrots, bells,etc
A bit of broth and some coconut milk.
Curry, tumeric, cumin, salt, pepper. Yum!

Red potatoes
Smoked Sausage
Can tomatoes large
Layer red potato on the bottom of crock pot, chop if large.
Slice sausage into 3 inch chunks if desired
Empty can of diced tomatoes on top
Cook at least 4 hours on low, up to 7 hours.

I have a chicken receipe the whole family loves
1pkg chicken breasts or 2 large cans of chicken.
2cans cream of mushroom soup
2 cans cream of chicken soup
1 sm can of sliced olives
1 small can diced chilies
1 small pkg corn tortillas
Green taco sauce to taste
Cheddar cheese
Cook the chicken before you leave home and put in fridge or boil it
Shred the chicken and mix with the soups
Taco sauce and chilies
Layer tortillas, chicken mixture, and cheese in crock pot, cook on low.
I love pulled pork, particularly if it is served on fresh bakery rolls. It’s also good on corn chips like nachos, with cornbread. Coleslaw is good with this for a more balanced meal. Here’s how it’s done. Be flexible with it, you can vary the results that way.
1 hunk of lean pork, choose your size, 3-4 pounds is good. Trim off any big hunks of fat
1 sliced onion
2-4 cloves garlic, sliced or chopped
1 cup beer, wine, water or chicken broth
1-2 cups of your favorite Q sauce (adjust to size of roast)
Rub to your taste, optional: 1 T brown sugar, 1 T kosher salt,1 T chili powder, 1 tsp cumin, 1/4 tsp cinnamon
Layer the onions and garlic on the bottom of the crock
Pour beer over onions
Pat roast dry, mix the rub ingredients and rub it over pork (I often skip this step, still get great pulled pork)
Pour over the roast a cup of your favorite Q sauce
Cook on HI for 6-8 hours of LO for 8-10 hours until the roast is fork tender. Size of roast will affect the time.
Reach into pot with two forks and shred the roast, discarding any fat that is left. Add more Q sauce if needed for the proper consistency. Enjoy!
Whats Q sauce?
I think it’s BBQ sauce.
Slow Cooker Pork Tenderloin
2 pound Pork Tenderloin
1/4 cup low sodium soy sauce
1 TBS Yellow Mustard
2-3 TBS maple syrup
2 TBS olive oil
2 TBS Diced dried onions
1 1/2 TSP Garlic Salt or Powder
Mix ingredients above. Pour over Tenderloin in the crock pot and cook on low for 6 hours
Crockpot Cube Steak and Gravy
Cube steak (I used a family size pack)
2 cans (10.75 ounce size) cream of mushroom soup
1 envelope onion soup mix
3/4 cup water
Salt and Pepper to taste
Directions:
Place all ingredients in a crock pot. Cook on low all day. Serve over rice, noodles, mashed potatoes or with your favorite side dishes.
Complete Steak Dinner in CrockPot
Use a thick 3/4 inch steak
Pour a 1/2 cup A1 or Heinz 57 sauce over meat
cover with a layer of foil
add foil wrapped potatoes
and foil wrapped frozen corn cobs (or fresh cobs)
cook on low for 6 hours
Full steak dinner any night of the week! This can also be done with thick pork chops or chicken breasts and BBQ sauce. The whole meal cooks in the slow cooker.
Crock Pot Ranch Pork chops:
package of boneless pork chops
1 can of Cream of Chicken soup
1 packet dry Ranch dressing mix
In Crock Pot layer pork chops, add the cream of chicken soup, then sprinkle dry Ranch dressing all over.
Cover and cook on high for 4 hours OR Low for 6 hours.
The pork chops come out very tender and the flavor is amazing! You also get a good gravy for mashed potatoes
Crockpot Spaghetti
1 pound ground beef, browned well
1 tblsp instant minced onion or 1/2 onion chopped finely
1 1/2 tsp.salt
1/2 tsp of each: garlic powder and dry mustard
1/4 tsp of each: mace, allspice and pepper
8-oz can tomato sauce
4-oz can mushrooms
3 cups tomato juice
Add all ingredients to crockpot and stir well
Cover and cook on low 6-8 hours or high 3 1/2 hours
In last hour if on low turn to high and stir in DRY spaghetti (4 oz or 1 1/2 cups broken in 4-5″inch pieces). Stir to mix through and cover again.
I love our crock pot! Here is one that we enjoy:
FRENCH DIP
1 roast
1 can French Onion Soup
1 can beer
1 package hoagies

Trim all fat. This is very important for the flavor. For some reason, leaving the fat on decreases the flavor. I know this through error.
Add roast to crock pot and pour soup and beer over it.
When done cooking, (standard crock pot cook times apply), butter the inside of each hoagie, toast the hoagies in the broiler or over a campfire, slice roast and place slices inside hoagie. Serve with a side of the juices.
I always buy a HUGE roast to freeze for a later meal or make Beef n’ Noodles.
Easy chicken & dumplings
2-3 chicken breasts (boneless, skinless )
2-3 cans cream of chicken soup (with equal water)
1 onion, diced
1-2 cans of Biscuits (cheap 8 count pkg)
Put chicken, soup & water in crick pot. Cook on low for 6 hours
Remove chicken and Shred, return to the pot
Cut or tear biscuits into quarters and drop into soup. Cook additional 20-25 minutes. Stirring as needed, pushing dumplings below surface of soup
